My Salted Pistachio and Dark Chocolate NYC Cookies are a delicious twist on a classic favourite. Soft and chewy with just the right amount of crunch from the pistachios and bursts of rich dark chocolate throughout. They’re (unsurprisingly) finished with a delicate sprinkle of salt that perfectly balances the sweetness. Simple to make but impressive to serve, these cookies are ideal for sharing with friends or keeping all to yourself (no judgement!)

225g unsalted butter, cold and cubed
250g brown sugar
80g caster sugar
1 whole egg + 1 egg yolk
340g plain flour
