My Famous Focaccia Recipe
No Made by Mandy dinner party is complete without this focaccia recipe. I first developed it in 2019, and after years of tweaking and perfecting, it’s finally ready to shine. With its crispy edges and airy centre, it’s become a signature dish that even my Nonnas now use instead of their own traditional recipes. If you’ve got a little more patience, there’s a tip to make it even fluffier, but even when made the simpler way, it’s still incredibly delicious. It’s the perfect combination of flavour and texture, and always a hit at any gathering.


Ingredients
7g yeast
2 tsp honey
615ml lukewarm water
625g plain flour
3 tsp fine salt
Extra virgin olive oil
2 large rosemary sprigs (optional)
1 tsp sea salt
