Lemon Olive Oil Cake
This Lemon Olive Oil Cake is my absolute favourite to make—it’s so versatile and customisable, and everyone always asks for the recipe! With its light, moist texture and zesty lemon flavour, it’s perfect for any occasion. You can easily tweak it by adding berries, stone fruit, a sprinkle of cinnamon, or a dash of cardamom—whatever suits your mood or the season.

Ingredients
315g plain flour
230g caster sugar
3 tsp baking powder
1/4 tsp salt
125g extra virgin olive oil
250ml milk
40ml lemon juice
2 tbsp lemon zest (about 2 lemons)
1 tsp vanilla extract
2 teaspoons icing sugar, for dusting
