Crispy Peanut Butter Pretzel Slice
My current high protein snack obsession (with 10g of protein)

Crunchy, chocolatey and packed with peanut butter…these pretzel slices are my current favourite snack to meal prep. They take just 10 minutes to make, have 10g of protein per serve, and keep in the fridge all week (if they last that long 🙈).
Makes 10
Ingredients
45g soy crisps
45g pretzels, roughly chopped
25g chocolate protein powder
170g Fix & Fogg Everything Butter (or your preferred peanut butter)
160g honey
45g coconut oil
Pinch of salt
Topping
140g milk or dark chocolate
20g coconut oil
10-12 whole pretzels, to decorate
Method
Line a loaf tin with baking paper and set aside.
Combine the Everything Butter (or peanut butter), honey, coconut oil and salt in a small saucepan over low-medium heat, stirring until melted. Alternatively, melt everything together in the microwave in 30-second bursts, stirring between each.
In a large bowl, combine the soy crisps, chopped pretzels and protein powder. Pour over the warm peanut butter mixture and fold until everything is well coated.
Tip the mixture into the prepared tin and press down firmly with the back of a spoon.
Melt the chocolate and coconut oil together until completely smooth, either in the microwave in short bursts or in a heatproof bowl set over a pot of gently simmering water. Stir until silky.
Pour the chocolate over the base and spread to the edges. Arrange the whole pretzels on top and refrigerate for at least 2 hours, or until completely set. Slice into cubes and serve.
