Serves 4
Ingredients
500g beef mince
2 tsp extra virgin olive oil
Salt and pepper, to taste
2 tsp tomato paste
2 tbsp Umami Papi Crispy Chilli Oil (plus extra to serve)
1 tbsp honey (plus extra to serve)
2 medium sweet potatoes, peeled and diced
1 cup cottage cheese
2 ripe avocados, diced
Method
Drizzle the diced sweet potatoes with olive oil and season with salt and pepper. Air fry at 200°C for 15–20 minutes, shaking the basket halfway, until golden and crisp on the edges.
Heat 1 tablespoon of crispy chilli oil in a frying pan over medium-high heat. Add the beef mince and cook, breaking it up, until browned and crispy (about 6-8 minutes). Stir in the tomato paste, remaining tablespoon of crispy chilli oil and honey. Cook for another 1-2 minutes, until everything is sticky and well coated. Season with salt and pepper to taste.
Divide the crispy sweet potatoes, beef, cottage cheese, and avocado between four bowls. Finish with an extra drizzle of crispy chilli oil and honey.
