It’s the one we make hundreds of litres of each year, but I’ve scaled it down so you can easily recreate it in your own kitchen. This sauce is simple, versatile, and full of love. I could (and have) drank it straight from the jar! Plus, I’ve included a full cooking class video to guide you through the process!
What’s the Difference Between Passata and Sugo Pronto?
Passata is simply pureed and strained tomatoes, a base that still requires seasoning and cooking before consuming. Sugo pronto, or “ready-made sauce” as we call it, is a fully cooked and seasoned sauce that you can pour straight onto your pasta—no additional prep needed. In this guide, we’re making a classic sugo pronto, just like my Nonna makes it.
