If banana bread and granola had a love child, this would be it. Sweet, nutty, and perfectly crunchy. This Banana Bread Granola gives you all the cozy banana bread energy, just in a crunchy, golden, eat-by-the-handful form. It’s naturally sweetened with ripe bananas and maple syrup, loaded with toasty oats and nuts, and finished with a hint of cinnamon. Eat it straight off the tray (no judgment), sprinkle it over yoghurt, or drown it in milk like a cereal. Either way, it’s dangerously good.


Makes approximately 6 servings (fills 1 large baking tray)
Ingredients
2 ripe bananas
60g extra virgin olive oil
3 tbsp maple syrup
1 tsp vanilla extract
2 tbsp water
1 tsp ground cinnamon
Pinch of salt
300g rolled oats
60g nuts of choice (walnuts, almonds, or pecans work well)
1 tbsp chia seeds
Method
Preheat the oven to 160°C. Line a baking tray with parchment paper. Mash the bananas until smooth, then transfer to a large bowl along with the olive oil, maple syrup, vanilla and water.
Stir in the cinnamon, salt, oats, nuts and chia seeds until combined. Spread the mixture in an even layer on the prepared baking tray. Bake for 15 minutes, then toss and bake for another 10 minutes or until golden.
Let it cool completely before storing in an airtight container for up to a week, or freeze for up to a month.
